No Mayo Mediterranean Chicken Salad
Ingredients:
1 stick cinnamon
2 lb boneless chicken breast
1/4 cup sweet onion, chopped
1/2 cup pitted black olives, chopped
2-3 stalks celery, chopped
3 ripe fresh tomatoes, chopped
16-20 oz canned chickpeas, rinsed & drained
1/4 tsp black pepper
2 tsp dried marjoram or oregano
1/3 cup lemon juice
1 tbsp capers
2 tbsp extra virgin olive oil
salt
Directions:
Boil the chicken in water with 1/2 tsp salt and one stick of cinnamon until fully cooked (approximately 18
minutes). Drain and cover the chicken, then cool in the refrigerator for 10 minutes before shredding by
hand. Combine all the ingredients with a pinch of salt, toss and serve. Serves 8-10.
