Feta Cheese & Zaatar-Stuffed Mushrooms
INGREDIENTS
2 small packages of Cremini mushrooms (approximately 8-10 mushrooms per package)
24 ounces of chopped tomatoes or tomato sauce
1/2 lb feta cheese
4 ounces shredded Parmesan cheese
2-3 ounces Zaatar
1 teaspoon Balsamic vinegar
1/2 teaspoon salt
1/2 teaspoon black pepper
DIRECTIONS
Pre-heat the oven to 400 degrees. Mix the chopped tomatoes, vinegar, salt and pepper and pour them into a medium-sized casserole dish. Clean the mushrooms and separate the stems from the caps. Dice roughly half the stems and add them to the tomato sauce in the casserole dish. Stuff each mushroom cap with a generous portion of feta cheese and place them in the dish on top of the sauce. Sprinkle a generous portion of zaatar on top of each stuffed mushroom cap. Cover the mushrooms with shredded Parmesan and bake at 400 degrees for 30 minutes. Serves 4-6 people.
