INGREDIENTS
14 oz canned fuul mudammas (fava beans)
3 tbsp. minced cilantro
2 tbsp. lemon juice
2 tbsp. olive oil
1 clove garlic, minced
1 tbsp. spring onion, diced
1 tbsp. harrisa hot paste
1/4 tsp. salt
1/2 lb chicken, diced
5-6 tbsp. diced tomato (2.5-3oz)
1 tsp. butter
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. black pepper
DIRECTIONS
Place half of the cilantro and all of the fuul, lemon juice, olive oil, onion, garlic, harissa and salt in a medium-sized saucepan on medium-high heat, stirring occasionally for approximately 5 minutes, then cover and turn the heat to low. Put the chicken, diced tomato, butter, and the remaining spices in a medium-large frying pan and cook at high heat, stirring regularly, for approximately 5 minutes, until the chicken is done. Serve the cooked chicken on the fuul with the remaining cilantro on top. Serves four.
